Graduates are currently working in various full-time culinary
positions in hotels, restaurants, country clubs, casinos, cruise
boats, offshore galleys, and in other professional culinary
properties.
An Executive Chef at a National New Orleans Hotel reported that "the average salary for chefs and sous chefs in New Orleans
is between $35,000 and $50,000 a year". He says, "Executive
Chefs can earn from $40,000 to $150,000 per year". These
positions generally take years of demonstrated performance.
SCLAFANI'S COOKING SCHOOL keeps "Letters of Intent to Hire"
on file from industry leaders who hire our graduates. These
letters are a testimony to the success of our students with
quotes such as..."conscientious and knowledgeable in their
skills and proficient in their technical abilities".
Many of these businesses request 2 to 3 years of documented
commercial cooking experience as a requirement for employment.
Employers have waived those years of experience and accepted
(SCS) 4 weeks of training.
Some (SCS) graduates choose offshore galley positions beginning
at $700 to $950 per week and more plus benefits.
Surveys of written employment projections by businesses who
hire our students, estimate collectively that over 1500 graduates
per year could be placed, if (SCS) had that many graduates available.
There is an approximate ratio of 8 jobs projected per student
annually.
