Papa Sclafani founded Restaurant Sclafani in 1945 in Mid City New Orleans La. First son Frank studied the restaurant business and cooking under the guidance of Papa Sclafani for 30 years.
Frank P. Sclafani, Sr., C.E.C.,
F.M.P., is an active member of the American Culinary Federation
- New Orleans Chapter and was chosen as their "1994 Chef
of the Year". Chef Sclafani successfully completed the
Foodservice Management Professional (F.M.P.) requirements, and
earned his credential from The Educational Foundation of the
National Restaurant Association. He is also a member of the
Louisiana Restaurant Association, the Chamber of Commerce, the
National Association of Catering Executives and other professional
organizations.
Chef Sclafani participated in the Acadiana Culinary Classic
and the Baton Rouge Classic sponsored by the American Culinary
Federation local chapters as a judge. Chef Sclafani, his staff
and students were especially proud to cook for the three United
State Presidents; Gerald Ford, Jimmy Carter and George Bush.

The Internationally known Restaurant
Sclafani located at 1315 North Causeway Blvd. in Metairie, LA
was built in 1958 and operated until 1985.
Chef Frank Sclafani has 27 years of professional culinary restaurant
experience as an owner / executive chef of Restaurant Sclafani
in Metairie, Louisiana. His a la carte and dinner menu had over
100 items from which to choose. This was a popular location
for celebrities, businesses, banquets and wedding receptions.
He managed a staff of 150 restaurant employees in a landmark
restaurant providing table cloth seating for 500 guests.
Chef Frank earned his Bachelor of Science Degree from St. Edward's
University, Austin, Texas. |
