will find what the course of study is and what the student will
accomplish in hands on training. |

are other off-campus housing selections that may be less expensive

| Both career changers and persons
with experience as commercial cooks, chefs and restaurateurs
owners have completed Sclafani's Cooking School. The Greater
New Orleans culinary industry recognizes our 1500 graduates
as an asset to provide future chefs and cooks for their businesses. |

| What
is the main course of study? |
The main course of study is
Commercial Cook/Baker. Culinarians learn the principals and
processes of cooking and baking, cooking theory and techniques,
sanitation and safety standards (ServSafe Certification Certificate
is achievable), self-management and leadership qualities are
practiced.
Daily hands-on training using commercial kitchen equipment,
daily home-work and daily classroom testing is required. Students
perform hands on training in baking pies, cakes, cookies, some
candy, boiling type of puff pastry, yeast dough and quick breads.
Cooking skills are listed as: sauté', braise, roast,
stew, deep fry, grill, griddle, poach and steam.
The students calculate raw food cost, derive the working factor
to raise or lower the portion yield of a recipe to match the
required servings; prepare and cook food items as; seafood,
turkey, chicken, lamb, pork, beef, breakfast items, herbs, spices,
seasonings and garnishes. |

| Can
this course assist me if I am already a chef or cook? |
| Using our proven teaching theory
and skill techniques for the past 20 years of continuous service
this course can assist you in building on your experience to
give you a wider spectrum of cooking methods and fundamental
concepts. As a Certified Chef or Cook who successfully completes
this course at Sclafani's Cooking School, you would be eligible
to receive 120 hours of continuing education credits towards
ACF certification renewal. |

is the ServSafe Exam Given? |
| The ServSafe course is administered
and the exam is given during the fourth week of the training.

| How
long is the training? |
In just 4 weeks of intensive
professional skill training, we can prepare you as a properly
qualified and motivated person to be job ready for culinary
career building employment.
Classes commence monthly for your convenience to enroll.
Your Cost is only $3,995. One cost that’s all.
You could qualify for a 100% Grant (Grant is not a loan),
if you are a Louisiana Resident.
